Dandelion can be found everywhere. Well, not in the parking lot at the supermarket, but it grows practically in every single sunny corner in the countryside. The small leaves can be picked up in early spring when they are fresh and not very bitter and turned into a delicious and extremely healthy salad. I know that not many people have ever had the opportunity or the disposition to eat a dandelion salad but it is definitely worth trying. Your liver will most definitely thank you.
Did you know that the liver is the single most important organ in our body? The liver must filter all the substances that we are ingesting every single day and most of these substances are poisonous. If and when the liver is not working properly the toxins will build up in our system and eventually the system will collapse. Dandelion contains liver stimulating substances and it is much recommended to those who suffer from debilitating liver and gallbladder diseases. Dandelions leaves contain proteins, carbohydrates, minerals, vitamins A, C and K and can really reduce the symptoms in chronic hepatitis, help dissolve gallstones and stimulate the appetite.
In some countries people use to eat fresh dandelion stalks as a way to improve liver function and remove the toxins. They are eating 10-15 stalks a day for 14 days or more and this regime lowers blood sugar and might help people reduce their diabetes medication to a minimum for a while. This plant can do so much for our heath that it is a shame to avoid it because it is a little bitter. Remember that you coffer and your beer is also bitter but you got used to it in the end. So why not give dandelion a try? You might have a surprise.
